Nutty Blueberry Quick Oatmeal

Cook Time: 1 to 3 minutes

Total Time: 10 minutes

Servings: 1

Ingredients:
  • ¼ cup of steel cut quick cook oatmeal
  • 1 tablespoon of chia seeds
  • 1 teaspoon of cinnamon
  • ¼ cup of trail mix
  • 1 tablespoon of nut butter
  • ½ cup of plant-based milk
  • Blueberries
Instructions:
  1. Place oats, chia seeds, cinnamon, and trail mix into a small bowl and mix.
  2. Add nut butter and plant-based milk and stir until well mixed.
  3. Place into the microwave for one to two minutes.
  4. Allow to cool for about one minute.
  5. Add a small handful of blueberries and enjoy!
Notes:
  1. Any kind of quick cook oatmeal should work for this recipe, I just prefer making it with steel cut oats! If using standard oatmeal, you will want to cook on the stovetop.
  2. Optional add-ins: flax seeds, coconut flakes, goji berries, and other types of berries!
  3. I tend to use fresh blueberries, however, when they are not in season, I will put frozen blueberries on top and place in the microwave with the oatmeal. You may need an extra 20 – 30 seconds to ensure they completely thaw, and they tend to explode a little bit making the oatmeal turn purple!
